I want to share one of my soups I use to prepare for my work meal prep this week, Brown rice asopao
I’ll be honest I’ve worked in the industry for 8 years and I only use recipes when it comes to baking and pastry. For savory foods I don’t use recipes I go by feel and taste.
An asopao is soup with rice is very popular during cold months in Dominican culture. Actually this meal didn’t start as an asopao I kind of just wanted soup. I was making the soup and thought damn this is boring let me add something else, but what? I just bought a bag of brown rice for my next meal. I thought let me add some rice. I don’t eat white rice so I added brown rice but brown rice is longer to cook then white rice but is healthier then white rice. I already added all the other ingredients but not the rice or lentils. Because brown rice takes longer to cook, the lentils will be added later on.
I’m not super healthy but I’ve watched what I eat and prepare food that feels good. I’ve lost over 25 pounds in 8 months working out and watching what I eat but as I’m learning about health and my body , I couldn’t deprive myself of food especially with a sweet tooth I have and working in a bakery. I’ve substitute a few of my favorite foods for something healthier . One of the amazing things I’ve added to my meals that I just found out like last month are spices. Spices are so yummy and add flavor to your dishes. Oh and yes and Tabasco sauce I add , my family is big on Tabasco sauce but I never was till now. So many of my dishes have spices on it .
1/2 cup of lentils
1/2 cup Brown rice
2 sticks Celery
3 garlic gloves
1. Mise en place (putting it all together) all ingredients before cooking. Is always best so you won’t be all over the place
2. Add oil of your choice and the garlic with the spices and cook it together. Then add onions, celery and cook till golden brown . I added a little bit of salt and pepper and I threw in a lil adobo for more flavor.
3. Add water , about 4 cups then 1/2 cup brown rice. Brown rice takes for ever. It takes about 30 minutes to an hour when you see the rice opening up is ready.
4. After add the carrots then add 1/2 cup of lentils . 20 minutes
5. Serve when you ready
